Meet Buckwheat

 

Guys! Have you come across pretty little pyramid-shaped nuggets of Buckwheat before? Despite the name, Buckwheat has nothing to do with wheat and is gluten free; like quinoa, it’s a ‘pseudocereal’. It has a really high mineral and antioxidant count, and it’s really budget friendly too (easy to find in your nearest health shop). For this Bircher Muesli, I’ve also added in other health-boosting staples like chia seeds, baobab powder and hemp seeds, all highly nutritious, although of course they are optional.

Actually, I introduced Buckwheat to you in my favourite Buckwheat Granola a while ago. And then there are these Beautiful Quinoa Breakfast Parfaits. And as I’m sure you already know, buckwheat noodles (known also as soba noodles) are a great addition to Asian food. Also! Buckwheat flour is a great option for gluten-free baking, and I’ve created a recipe for YUMMY sugar and gluten-free Chocolatey Buckwheat Crêpes with Cappuccino Ganache for my next book. Look out for it from April 2017 onwards. In the mean time though, this will have to do.
