Bacon, Sage and Red Onion Jam

 
 

Ingredients

Cooks in:        Serves:4

  • 1 Tbsp butter
  • 1 Tbsp Willow Creek Olive oil
  • 2 red onions, roughly chopped
  • 200-250g bacon, chopped
  • 1 Tbsp brown sugar (or coconut sugar)
  • 2 Tbsp brandy
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp dried sage
  • Juice of 1 orange (or naartjie/clementine)

What to do

1. Fry the bacon until crispy (about 5 minutes), then use a slotted spoon to remove and set aside on kitchen paper.

2. Add in butter and olive oil, and then fry the onions gently, along with the sugar, for 5 minutes, or until the onions are translucent.

3. Add the remaining ingredients as well as the bacon to the pan and simmer gently for about 30 minutes with the lid on or ajar. If you find the mixture becomes too dry, add a little more clementine or orange juice.

4. Store in a sterilised jam jar.
