Coconut Bliss Balls

 

Isla loves these. And believe me that’s saying something for the 3 year old who lives on plain spaghetti and maybe, at a push, the odd fish finger. SO, that should be all you need to know before you dash to your pantry to make a batch asap. But if you’re still not convinced, let me add that they’re the perfect, healthy oh-the-go snack (free of any refined sugars or gluten), they’re amazing little pre-exercise energy boosters, I panic if I leave the house without them, and they’re completely delicious. YAY!

 

Ingredients

Cooks in:        Serves:6-8

  • 240g raw cashew nuts
  • 110g desiccated coconut (natural, unsweetened)
  • 170g raisins (no addes sugar, preservative-free)
  • 130g dates, pitted and soaked
  • 20g cashew nut butter
  • Pinch sea salt flakes

What to do

1. Soak dates in hot water for 1 minute, then drain well.

2. Meanwhile, add the nuts to the mixer and pulse a few times until coarsely chopped. Add in all other ingredients, along with the drained dates, and blend until the mixture comes together in a ball and is a fairly smooth paste.

3. Divide into portions and roll into balls, and store in an airtight container for up to 4 weeks outside the fridge, or 8 weeks in the fridge.
