Easy Espresso Mousse

Happy, magical 2016 to you all! I hope that this will be one of your best years yet – make it so. What better way to kick things off on the blog than with a merry give-away? I’ve teamed up with the Pierre Jourdan Cap Classique team and their beautiful range of bubbly’s (from the same people who give you the exquisite Haute Cabrière collection) and have developed three recipes for them, the first of which I’m sharing below along with the competition details.

This decadent and horribly delicious Espresso Mousse has just a handful of ingredients, and if you have the post-Christmas-post-New Years blues then hang in there for Valentines Day. This a doddle to make and is a dinner party dream. Paired with the Pierre Jourdan Blanc de Blancs it’s proper feasting food and I hope you’ll give it a bash when February 14th comes around!

 

Ingredients

Cooks in:        Serves:4

  • 250ml fresh cream
  • 100g dark chocolate, finely chopped
  • 1 tsp instant espresso or coffee powder
  • 1 tsp vanilla paste
  • Small handful fresh raspberries, or roughly chopped strawberries
  • Fresh baby mint or basil leaves, to garnish

What to do

1. Add your chocolate pieces, 100ml of the cream, the espresso powder and vanilla paste to a heatproof bowl over a double boiler (a pot of 1cm deep just-simmering water, make sure the base of the bowl does not touch the water in the pot or the chocolate might get too hot).

2. When the chocolate has melted and you have stirred until it’s silky, remove from the heat and set aside to cool.

3. Whip the cream to stiff peaks, and then gently fold through ¾ of the chocolate mixture. Pour into small serving glasses and refrigerate (for at least 1 hour).

4. Just before serving, drizzle over some of the left over chocolate sauce, top with fresh raspberries and fresh baby mint or basil leaves.
