Golden Turmeric Oats Porridge

 

This recipe was kindly shared with us in my new book Wholesome by my lovely friend and food stylist, Luisa Farelo. It’s gently spiced with cinnamon and turmeric, which gives it a warm golden hue that can only leave you smiling. Ingredients

Cooks in:        Serves:2

  • 1.5 cups full-cream milk, nut milk or rice milk, plus extra for serving
  • 1/4 tsp ground cinnamon
  • 1/4 tsp turmeric
  • pinch of salt
  • grated nutmeg
  • 3/4 cup rolled oats (certified gluten free if necessary)
  • handful fresh raspberries (or chopped apple or pear)
  • 2 Tbsp sunflower seeds, lightly toasted
  • maple syrup

What to do

1. Place the milk into a saucepan together with the cinnamon, turmeric, salt and nutmeg.

2. Add the oats and bring to a gentle simmer.

3. Simmer the oats for 8–10 minutes, stirring occasionally until thickened slightly and creamy.

4. Pour into bowls and scatter with raspberries and toasted sunflower seeds.

5. Drizzle over a little maple syrup and pour in a dash of cold milk.
