Passion Fruit and Ginger Cordial

 

This Granadilla (Passion Fruit) and Ginger Cordial takes 10 minutes to put together and gives you a lifetimes worth of smugness, especially if you make the sugar free version which I’ll explain below. That means no string of E-numbers and preservatives, just pure passion fruit and ginger flavour, and that glorious chilled fizz.

 

Ingredients

Cooks in:        Serves:Makes about 750ml

  • 1-2 tsp grated fresh ginger
  • 1 cup boiling water
  • 2/3 cup light brown sugar or xylitol
  • 2-3 Tbsp lemon or lime juice
  • 1 cup (2 tins) passion fruit pulp

What to do

1. Add all of the ingredients except the passion fruit pulp to a medium-sized pot and simmer gently until the sugar has dissolved. Remove from the heat, add in the passion fruit pulp and leave to steep for 5 minutes, or up to an hour.

2. Sieve the mixture into a serving jug, leave to chill to room temperature then transfer to the fridge and serve with ice cold sparkling water as and when you like. I usually mix approx 1-2 Tbsp of the cordial per glass of sparkling water.
