Raw Chia, Coconut and Cacao Power Balls

 

I had such fun creating these cute little guys for my friends at Nutribullet. Power Balls are definitely a THING in our house, even sweet little Isla has her favourite flavour. They are nourishing, energy-giving refined sugar-free snacks that I can’t bear to leave the house without. Here, I’ve mixed together the superfoods chia and cacao, and thrown in some lovely coconut for good measure. I hope you’ll try them soon! (Also, I think that they’d make pretty snazzy post-Christmas-dinner truffles, don’t you?)

 

Ingredients

Cooks in:        Serves:Makes approx. 12 balls

  • 85g dried pitted dates
  • 50g dried cranberries (added fruit sugar only, no preservatives)
  • 75g rolled oats (gluten free, non GMO)
  • 50g raw almonds (or nuts of your choice)
  • 15g raw cacao powder
  • ½ tsp sea salt flakes
  • 1 level tsp cinnamon
  • 20g coconut oil
  • 2 level Tbsp chia seeds
  • Extra cacao, to dust (or roll in unsweetened desiccated coconut)

What to do

1. Soak dates and cranberries in hot water for 1 minute, then drain well.

2. While the fruit soaks, add the oats, nuts, cacao, sea salt flakes and cinnamon to your Nutribullet with the milling blade attached. Pulse until roughly chopped. Add in your dates and cranberries and continue to pulse until everything is well mixed. (Scrape down the insides of the nutribullet cup using a spatula from time to time if you feel it’s necessary).

3. Divide into portions and roll gently, then store in a glass jar in the fridge.
