Speedy Asian Beef and Noodle Bowls

 

Guys! This is fresh and clean and pretty and punchy and, all things considered, fairly marvelous. 

Also, have you tried Kelpamare yet? It’s made by our health-food friends at A.Vogel, and it’s a seasoning sauce made from a blend of soy sauce, spices, organically grown vegetables, cereals and concentrated kelp extract. And it’s uh-mazing. It’s got a giant kick of umami (that savoury-ness that you don’t even know you love in dishes like this), and it’s really dense and concentrated, adding a lot of depth of flavour to anything from soups to sauces and stews.

 

Ingredients

Cooks in:        Serves:4

Main Ingredients
  • 1 Tbsp olive oil
  • 400g steak (I used well-aged rump)
  • 400g zucchini noodles (or use soba noodles)
  • Handful fresh sprouts
  • Handful peanuts, roasted and salted (or use cashews or simple toasted sesame seeds)
  • 1 Tbsp each of chopped fresh mint and coriander
  • 2 spring onions, finely sliced
For the Dressing
  • 3 Tbsp sesame oil
  • 1-2 tsp Kelpamare (or more to taste)
  • 2-3 tsp fish sauce
  • 1-2 Tbsp honey
  • 1 clove garlic, minced
  • 1 red chilli, de-seeded and finely chopped
  • 
2 tsp grated fresh ginger
  • juice of 2 limes
  • 2 Tbsp hot water
  • Mix together and adjust to taste

What to do

1. Season the steak with Herbamare seasoning on both sides. Heat a good quality heavy-based pan on the stove and add the olive oil. Test that it's hot enough by dipping the corner of the steak into the oil, it should sizzle immediately. Cook the steak for about 3-4 minutes on each side for medium-rare (for steak that is about 1.5cm thick). Remove, and set aside to rest.

2. While the steak cooks, mix together the sauce ingredients and set aside.

3. While the steak rests, prepare your the rest of your ingredients.

4. Add the noodles to warmed bowls, top with thin slivers of steak, roasted peanuts, fresh herbs, spring onions and then add a generous drizzle of dressing.
