Angelfish & Red Pepper Tart
Angelfish is a green-listed SASSI fish here in South Africa, which means they get the sustainability thumbs up, always a good place to start. It is also really versatile, delicious just simply pan-fried with lemon zest and salt and pepper, or, as in this case, in the form of a really scrummy Mediterranean Delicacies Angelfish (or any fish) mousse. I’ve then turned the mousse into the filling for this Angelfish and Red Pepper Tart with lots of fresh dill added to the mix. And I can hear it calling your name, along with that bottle of chardonnay. So, go forth.
Ingredients

- 1 roll ready made short-crust pastry, defrosted (Or read my step by step guide on how to make your own here)
- 1 tub Mediterranean Delicacies Angelfish Pâté
- 1 small red pepper, de-seeded and roughly chopped
- 2 Tbsp fresh dill, chopped
- 1 egg
- 1 egg yolk
- 60ml cream
- A pinch of salt and freshly ground black pepper
- 1 x 15cm loose-bottomed tart tin, or 4 smaller tins, or a muffin tray
What to do
1. Pre-heat your oven to 180C. Roll out your pastry, grease and line your tart dish or 4 muffin tray holes with pastry. Prick the pastry with a fork a couple of times, and place in the freezer while you prepare the filling. 2. To make the filling, mix together the remaining ingredients with a fork until just combined. Set aside while you blind bake the pastry. 3. When your pastry is very well chilled, after about 10 minutes, lay a sheet of baking paper into the tart shell, and fill with baking beans (or lentils, or rice) so that it is weighted down. Blind bake for 10-15 minutes until lightly golden. Remove the baking paper and beans and allow the tart shell to cool to room temperature. 4. Once the tart shell has cooled, pour in the filling and bake at 170C for 20 minutes, or until the filling is lightly golden and set. Serve with a fresh green salad.
