5 Things To Do With Pesto (Besides Pasta)

 

Hey friends!
Here’s my favourite Summery Pesto recipe for you, as well as a few favourite tips on how to use it…

WHAT YOU’LL NEED
40g fresh watercress or basil, rinsed and thicker stalks removed, then roughly chopped⠀
2 Tbsp grated parmesaN (or any hard cheese)⠀
2 Tbsp toasted sunflower seeds, roughly chopped (a more budget-friendly alternative to pine nuts and just as delicious)
3-4 Tbsp olive oil⠀
1-2 Tbsp lemon juice⠀
½ clove garlic, chopped⠀
½ tsp sugar⠀
Pinch of salt⠀
*Blitz together, adjust to taste and loosen with extra olive oil or a little warm water if necessary.⠀
*Store in an airtight jar in the fridge for up to 1 week.⠀
*Make a double batch and freeze one for next time.⠀

AND A FEW SERVING IDEAS
Serve over baked potatoes, fish or lamb chops
Add to salads and wraps
Drizzle over a breakfast frittata, like this one
