6 Minute Chocolate Cake
I know it seems like cheating because a) it’s a microwave cake and therefore just not quite proper somehow b) it comes in the style of a very unsophisticated ring cake (which screams microwave), but this is one of those real gems that you are definitely going to thank me for one day. Like the Cheese Scones, it can be on your plate in 20 minutes, with the majority of that time being lent to foot-tapping while you wait for it to cool just enough to ice it. A lot of people are put off microwave cakes because they think they’re stodgy. Not true of this little poppet. Fluffy and light as air it is.
Ingredients
Cooks in: Serves:8-10
- 1 cup flour, sifted
- 1 cup sugar
- 1 level tablespoon baking powder
- 3 level tablespoons cocoa
- pinch salt
- 2 eggs
- 1 tablespoon cooking oil
- 1 teaspoon vanilla
- 1 cup boiling water
- Mix together until smooth (and you can alter the quantities of each of these to suit your preference)
- 1 cup icing sugar, sifted
- 2 Tbsp butter
- 2 Tbsp cocoa
- 2 Tbsp hot water
What to do
1. Mix dry ingredients together in a large mixing bowl Picture from 'Bitten' by Warren Heath.
2. In a separate bowl whisk together the eggs, oil, vanilla and boiling water and then add the dry ingredients
3. Pour into a greased microwave cake ring (if you only have a regular microwave cake dish that's not a ring, you can fix this by putting a mug in the middle and pouring in the batter around it to get the ring shape)
4. Bake on high for 6 minutes
