Asian Slaw with Zingy Dressing

 
 

Ingredients

Cooks in:        Serves:2

For the Slaw
  • 1/2 cup shredded red cabbage
  • 1/4 cup shredded carrot
  • Handful sugar snap peas, sliced lengthways
  • 2 handfuls baby spinach
  • 2 spring onions, thinly sliced
  • 1 Tbsp each chopped fresh mint and coriander
  • 1/4 cup roasted salted peanuts or cashews, roughly chopped
For the Zingy Dressing
  • 3 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp honey
  • 1 tsp chilli flakes
  • Juice from 1/2 lime
  • 1 tsp ginger, grated
  • Mix and taste

What to do

1. Divide the slaw between two bowls, drizzle over the dressing and serve immediately.
