Chicken with Chorizo and Cider

 
 

Ingredients

Cooks in:        Serves:4

  • 8 chicken thighs (skin on, bone in)
  • 1 tsp dried mixed herbs
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 3 medium red onions, cut roughly into sixths
  • 2 tsp crushed garlic
  • Approximately 200g chorizo, sliced
  • 1 bottle cider (or 340ml stock)
To Serve:
  • Creamy mashed potato or cauli mash and steamed green beans

What to do

1.) Pre-heat oven to 180C and season the chicken thighs with salt, pepper and the dried mixed herbs.

2.) Fry the chicken along with the olive oil and butter in a good quality (preferably oven-proof) shallow pan over medium-high heat, for about 3 minutes on each side or until golden. Remove with a slotted spoon and set aside.

3.) Add the onions, garlic and chorizo and cook for 2-3 mins until the onions have coloured slightly. Sprinkle in the flour and stir well.

4.) Add the chicken back in on top of the onion and chorizo, pour in the cider, put the lid on the pot and place in the oven for 30 minutes and then a further 15-20 minutes with the lid off.

5.) Serve in warm bowls with mashed potato and greens.
