Double Choc Chip Cookies

 
 

Ingredients

  • ¼ cup butter or cold coconut oil
  • ¼ cup nut butter
  • ¼ cup coconut sugar or brown sugar
  • 1 egg (or 1 Tbsp chia seeds soaked in 3 Tbsp water for 5 minutes)
  • 1 tsp vanilla paste / extract
  • ¾ cup plain flour or gluten free oat flour
  • 2 Tbsp raw cacao powder
  • Pinch of salt
  • ½ tsp baking powder
  • ¼ cup dark chocolate chips

What to do

1. Pre-heat oven to 180°C and lightly grease a baking tray.

2. Add the butter, nut butter, sugar, egg and vanilla to a mixing bowl and mix well until well combined and fluffy. Add in the remaining ingredients except the chocolate chips and mix again until smooth, then stir through the chocolate chips.

3. Roll into balls (using approx 1 large teaspoon of the mixture per ball) and press down gently onto each one with a fork.

4. Bake for about 10 mins, or until lightly golden and smelling delicious.
