Coconut Date Balls

 
 

Ingredients

Cooks in:        Serves:Makes 12 balls

  • 240g cashew nuts, blitz first
  • 110g desiccated coconut
  • 170g raisins
  • 130g dates, pitted and soaked
  • 20g cashew nut butter
  • ½ tsp sea salt flakes

What to do

1. Soak dates in hot water for 1 minute, then drain well.

2. Add in all other ingredients to mixer, then add in drained dates, and blend until the mixture comes together in a ball and is a fairly smooth paste.

3. Divide into portions and roll into balls, and refrigerate until set.
