Coconut Fish baked in Banana Leaves



Cooks in:        Serves:4

  • 750g fresh fish
  • 1 banana leaf (or tin foil/baking parchment)
  • 1 lime, sliced
  • ½ garlic clove, grated/minced
  • 1 tsp grated fresh ginger
  • 4 Tbsp coconut milk
  • Few sprigs of fresh coriander

What to do

1. Preheat oven to 210C.

2. Place fish on banana leaf lengthways (alternatively use tinfoil or baking paper), season with salt and pepper, placed lime slices over fish along with the garlic and ginger, drizzle with coconut milk and place coriander on top.

3. Fold in the sides of the banana leaf over the fish and fold over the top and bottom of the leaf. Tie together with string to make a neat parcel. Place on a baking tray and then into the oven for 15 minutes or until the fish is cooked through and flakes apart easily.
