Courgette & Mint Rostis with Tzatziki
I love the summery pop of colour and punch of flavour that these courgette and mint rostis bring to any table. And together with the delicious Mediterranean Delicacies Tzatziki, it’s a match made in culinary heaven. I also happen to think that the Tzatziki would make an admirable companion for grilled lamb chops or kebabs and fresh pita breads.
Ingredients
Cooks in: Serves:6
- 250g courgettes (about 8 medium-sized ones), grated and any excess moisture squeezed out
- 1 egg, lightly beaten
- 2 Tbsp plain flour
- 1 Tbsp chopped fresh mint
- Salt and freshly ground black pepper
- 6 Tbsp cooking oil
- 1 Tup Mediterranean Delicacies Tzatziki, for serving
What to do
1. In a mixing bowl, combine all of the above ingredients except the oil and set aside. 2. Heat half the oil in a heavy-bottomed pan on med-high heat. After a couple of minutes, test to check that the oil is hot enough by dropping a drop of the batter into the oil, if it bubbles and turns golden brown within 15 seconds it is ready. 3. Add 1 heaped Tbsp of the rosti mixture to the pan. Flatten with the back of the spoon and repeat until you have 3 rosti in the pan. Cook for about 3 minutes on each side or until golden brown. Remove and set aside on a plate lined with kitchen towel. Repeat with the remaining oil and rosti mixture. *Eat as soon as possible after cooking, and serve with dollops of fresh Mediterranean Delicacies Tzatziki on the side.
Note: I used the grater function on my food processor to grate the courgettes, super quick, and then I squeezed out extra moisture with kitchen towel.
