Green Goodness Power Smoothie

 

This full-of-goodness power smoothie can be eaten as a smoothie bowl with lots of happy-making toppings, but I prefer to pour it into a glass jar to drink on the go. These are my favourite greens to include, but of course you can mix it up according to what you have available.

 

Ingredients

Cooks in:        Serves:2

  • 2–3 cups water or coconut water
  • 2 cups baby spinach or roughly chopped kale
  • ½ avocado
  • ¼ medium-sized English cucumber
  • 1 courgette
  • 1 stick celery, roughly chopped
  • 1 apple or 1 kiwi, roughly chopped or 1/2 cup chopped pineapple,
  • squeeze of fresh lemon or lime juice
  • 1 thumb-sized piece of fresh ginger, skin on
  • 2 Tbsp ground almonds or 1 serving pea protein powder
  • 1 Tbsp chopped fresh basil or mint
  • 1 Tbsp spirulina or hemp seed powder (or moringa powder, or your favourite green powder)
  • 1 Tbsp chia seeds
  • 1 Tbsp baobab powder

What to do

Blend the smoothie ingredients together in a high-speed blender until smooth. Loosen with a little extra water if you find it too thick. Divide between glass jars. Refrigerate for up to one day.

Love Your Leftovers: Save the ends of your courgettes when spiralising by stashing them all in a freezer bag, and use them to add to your green smoothies as and when needed.
