Herbed Barley Salad
Ingredients
Cooks in: Serves:4
- 1 cup pearled barley
- 2 Tbsp red wine vinegar or Willow Creek Balsamic vinegar
- ¼ cup Willow Creek Olive oil
- 1-2 tsp runny honey
- 1 Tbsp each of chopped fresh dill, mint and basil
- Salt and freshly ground black pepper to taste
- Feta cheese (optional)
What to do
1. In a medium-sized pot of boiling water, cook the barley on the stove-top according to packet instructions. Drain and mix through the remaining ingredients, checking for seasoning and balance of flavours. 2. Spoon into small glass jars and refrigerate until just before serving.
