Honey-Mustard Roast Chicken with Sticky Red Apples and Onions

If you’ve been following my Instagram for a while, you might already know that I can’t live without my morning Oats – loaded with lots of mixed seeds, raisins, a little swirl of peanut butter, and lots of chopped crunchy sweet red apple. Our family takes the old adage of ‘an apple a day’ to a whole new level actually, because our girls favourite snack before bedtime is always a shiny, crunchy apple.
So, I couldn’t be happier to partner with the lovely team at JOYA Apples to support a proudly South African story, and to bring you this family favourite in the form of delicious honey and mustard Roast Chicken with sticky apples and red onions. I can’t wait to hear what you think!
PS The chicken can just as easily be swapped out for good old bangers, which is a winter staple in our home.
Ingredients
Cooks in: Serves:4-6
For the Chicken- 2 medium red onions, peeled and cut into eights
- 3 medium JOYA apples, cored and cut into sixths
- 2 cloves garlic, roughly chopped
- 1-2 sprigs of fresh thyme and rosemary
- 8 chicken thighs (skin on and bone in)
- Mix together: 2 Tbsp dijon or whole grain mustard + 2 Tbsp honey + 4 Tbsp lemon juice + 4 Tbsp chutney + 2 Tbsp hot water
What to do
1. Pre-heat oven to 180C 2. To a shallow, ovenproof dish add your onions, apples, garlic, herbs and then lay the chicken thighs on top before generously seasoning 3. Mix together the honey-mustard sauce in a small jug or bowl and then pour over the chicken, tossing everything together gently to ensure even coating 4. Cover with tinfoil or a lid and bake for 40 minutes, then remove the foil and cook for a further 15-20 minutes, or until the chicken is cooked through and the skin is golden 5. While the chicken cooks, prepare mashed potato or cauli mash and steamed greens of your choice to serve alongside the chicken
