Lavender Biscuits

 
 

Ingredients

Cooks in:        Serves:Makes 12 large biscuits

  • 240g soft butter
  • 110g (1/2 cup) caster sugar
  • 250g cake flour (2 cups)
  • 2 heaped tsp fresh lavender flowers, finely chopped
  • 1-2 Tbsp cold water (if needed)
  • Optional - heart-shaped cookie cutter

What to do

1. Preheat the oven to 180 °C and line a baking tray with baking paper.

2. Cream the butter and sugar together, and then mix in the flour and lavender.

3. If necessary, add water 1 Tbsp at a time and then briefly knead the mixture until it just comes together in a rough dough.

4. Roll the dough out onto a sheet of baking paper, flouring your rolling pin if the dough is sticking, and cut out heart-shaped biscuits. Place the baking paper onto a baking tray and refrigerate for 15 minutes for the dough to firm up, then pull away the 'frames' of the cookies. Reserve this extra dough by wrapping in cling film and storing in the freezer, or roll out and repeat the cooking cutting above.

5. Bake for 12-15 minutes, or until lightly golden.
