Molten Chocolate and Fig Pan Pudding



Cooks in:        Serves:4-6

5 figs, peeled and halved
For the Chocolate Filling
  • 200g butter, softened/room temperature
  • 100g castor sugar
  • 4 eggs, at room temperature
  • 1 tsp vanilla extract
  • 200g self-raising flour
  • 200g melted dark chocolate

What to do

1. Cream together the butter and sugar until smooth. This should take about 2-3 minutes. Add in the eggs, whisking well in between each one, and then add in the vanilla. Sift in the self-raising flour, add in the melted chocolate and fold everything together gently to combine, do not over-mix.

2. Pour the chocolate mixture into a large oven-proof skillet or baking dish, and add in the figs, cut side up. Bake for 10 minutes or until the chocolate mixture is just cooked but still soft in the middle.

3. Serve as soon as possible with fresh cream.
