Mom’s Cheese Scones

 

These are Rob’s favourite lazy any-day afternoon tea snacks. And they’re a double bonus because they can literally be on your plate oozing melted butter in exactly 20 minutes, your kitchen doesn’t look like a bomb hit it afterwards and you only have 1 dish to wash. So in addition, these scones are just one more reason to love Mom.

 

Ingredients

Cooks in:        Serves:10

  • 1 cup milk
  • 1 cup flour
  • 1 cup grated cheese
  • 1/2 tsp salt
  • 1.5 tsp baking powder
  • 1/2 tsp mustard
  • A few chopped spring onions. I had none recently and used 1Tbsp chopped red onion instead
  • I also threw in half a round of crumbed feta just for fun

What to do

1. Pre-heat oven to 200C and grease a muffin tray with butter or spray n cook

2. Mix dry ingredients in a bowl and add milk, stir until just combined

3. Spoon into the muffin tray and bake for 15 minutes until golden, puffy and delicious / you can insert a knife into one and it comes out clean

4. Serve with butter
