Papaya, Pineapple, Chilli and Sparkling Wine Granita
Ingredients
Cooks in: Serves:6-8
- 1 small-medium papaya, peeled and chopped roughly
- 1 pineapple, sliced and chopped roughly
- ½ cup of mint leaves
- Zest and juice of 1 lime
- 1 fresh chilli, de-seeded and finely chopped
- ½ cup Durbanville Hills sparkling wine
- 2 passion fruits, to stir in later after blitzing
What to do
Mix together and place in a freezer-proof container until frozen. Scrape the mixture with a fork to make ice shavings every hour and repeat until you have fluffy frozen ice. Photo from 'Sarah Graham's Food Safari Season 2' by Ricardo de Leça.
