Papaya, Pineapple, Chilli and Sparkling Wine Granita



Cooks in:        Serves:6-8

  • 1 small-medium papaya, peeled and chopped roughly
  • 1 pineapple, sliced and chopped roughly
  • ½ cup of mint leaves
  • Zest and juice of 1 lime
  • 1 fresh chilli, de-seeded and finely chopped
  • ½ cup Durbanville Hills sparkling wine
  • 2 passion fruits, to stir in later after blitzing

What to do

Mix together and place in a freezer-proof container until frozen. Scrape the mixture with a fork to make ice shavings every hour and repeat until you have fluffy frozen ice.
