Pasta with 5 Minute Pea Pesto



Cooks in:        Serves:2

100g dry pasta of your choice (gluten-free if necessary)
  • 1/2 cup frozen peas
  • 1 Tbsp toasted sesame seeds
  • 100g crumbed feta
  • 6-8 basil leaves
  • 1 small garlic clove
  • 2 Tbsp lemon juice
  • 2-3 Tbsp olive oil
  • 2 Tbsp water
Extra basil or coriander to garnish

What to do

1. Combine the ingredients for the pesto in your food processor. Pulse until it reaches your desired consistency. Check for seasoning and balance of flavours and adjust if necessary.

2. Just before serving: Cook the pasta for as per packet instructions in a large pot of boiling water with a dash of olive oil and a good pinch of salt. Drain, drizzle with olive oil, and mix until well coated.

3. Transfer to serving bowls, garnish and serve immediately.
