Peanut butter Power Porridge

 

These Peanut butter Power Oats have been making me so happy lately. I love any old creamy porridge for breakfast, but paired with a handful of raisins, a hint of vanilla and cinnamon and then a rich golden swirl of peanut butter this version is pretty magical. Also, adding in the pea protein and peanut butter is really good for your blood sugar, and keeps you fuller for longer, so there are lots of wins!

Ingredients

Cooks in:        Serves:2

  • 1/2 cup oats
  • 1 cup milk of your choice (I use rice milk or almond milk)
  • 1/2 cup water
  • 1 tsp vanilla extract
  • Pinch cinnamon
  • 1 heaped Tbsp pea protein powder
  • 1 Tbsp peanut butter

What to do

1. Add all of the ingredients except the peanut butter to a small saucepan and bring to a gentle simmer. Cook with the lid on for 15-20 minute, stirring occasionally and adding in extra water if necessary, until the oats are creamy and have thickened.

2. Transfer to serving bowls, swirl through the peanut butter and serve with an extra dash of milk and toppings of your choice.

Topping Ideas:
A handful of granola
Grated apple or sliced banana
A handful of frozen berries
Add in 1-2 tsp cacao powder during the cooking process for a chocolatey version and then serve with a drizzle of maple syrup
