Pineapple, Mango and Grape Salsa
Ingredients
Cooks in: Serves:4
- 1 small ripe pineapple, peeled and cubed
- 1 ripe mango, peeled and cubed
- Handful of grapes
- ½ cucumber, roughly chopped
- 1 heaped tsp grated fresh ginger
- 1 small red chilli, de-seeded and finely chopped
- ¼ small red onion, finely chopped
- 1 cup black beans
- Juice and zest of 1 lime
- 1-2 Tbsp Willow Creek olive oil
- Pinch of sugar or drizzle of honey, or more, to taste
- 1 Tbsp chopped fresh mint
- 1 Tbsp chopped fresh coriander
- Salt and pepper to taste
What to do
