Pineapple, Mango and Grape Salsa

 
 

Ingredients

Cooks in:        Serves:4

  • 1 small ripe pineapple, peeled and cubed
  • 1 ripe mango, peeled and cubed
  • Handful of grapes
  • ½ cucumber, roughly chopped
  • 1 heaped tsp grated fresh ginger
  • 1 small red chilli, de-seeded and finely chopped
  • ¼ small red onion, finely chopped
  • 1 cup black beans
  • Juice and zest of 1 lime

  • 1-2 Tbsp Willow Creek olive oil
  • Pinch of sugar or drizzle of honey, or more, to taste
  • 1 Tbsp chopped fresh mint
  • 1 Tbsp chopped fresh coriander
  • Salt and pepper to taste

What to do

1. Mix everything together in a pretty serving bowl and adjust to taste.
