Rooibos and Strawberry Iced Tea
Ingredients
Cooks in: Serves:4
- 1 thumb-sized piece of fresh root ginger, roughly chopped
- 2 Tbsp honey
- 250g fresh strawberries, roughly chopped
- Small handful fresh mint leaves
- 1 litre freshly-brewed rooibos tea (4 teabags)
What to do
1. To a small jug, added strawberries, ginger and mint, purée using a stick blender. And honey and funnel the mixture into a large glass bottle. Pour in the cooled tea and add slivers of strawberry to top it off. 2. Serve over crushed ice in small glasses, garnish with a little extra fresh mint and enjoy.
