Speedy Salted Caramel Ice Cream

 

Nothing shouts home comfort as loudly as a good dose of ice cream. I always think of it as a universal language all of its own where every sentence is punctuated with a resounding ‘yes please’. This is one of my favourite family-friendly fuss-free entertaining recipes, because it can be made well in advance and, young or old, rain or shine, I don’t know anyone who will turn their nose up at this glossy, creamy salted-caramel goodness.

Ingredients

Cooks in:        Serves:6

  • 1 tin Nestlé dessert cream
  • Pinch of bicarbonate of soda
  • 1 tin Nestlé condensed milk
  • 2 heaped Tbsp Nestlé caramel treat
  • 1 Tbsp hot water
  • 1 heaped tsp sea salt flakes
  • Handful chopped roasted salted almonds, to serve

What to do

1. Line a medium-sized loaf tin with baking paper.

2. Using an electric whisk and a large mixing bowl, whip the dessert cream with the bicarb for up to 5 minutes, or until it is very light and well aerated. It won't whip fully like regular cream does, but it will become lighter and fluffier.

3. Add the condensed milk to the cream, while whipping continuously.

4. In a separate bowl, whisk together by hand the caramel treat, hot water and sea salt flakes until smooth, then add it to the cream and condensed milk mixture and mix again.

5. Pour the mixture into the loaf tin and freezer for at least 4 hours.

6. Serve with a handful of chopped nuts.
