The Bees Knees Salad Dressing
Ingredients
Cooks in: Serves:2-3
- ½ ripe avocado
- 1 small clove garlic
- 2 Tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp sugar, honey or maple syrup
- 1 tsp Dijon mustard
- Small handful each of basil, parsley, coriander and mint
- ¼ cup olive oil
- ¼ cup warm water
- Salt and pepper, to taste
- Optional: ½ fresh green chilli, de-seeded
What to do
Blitz together and adjust to taste. Keep in a glass jar in the fridge for up to 3 days.
