Grapefruit and Star Anise Lemonade



Cooks in:        Serves:4

  • zest of 1 grapefruit
  • juice of 3 grapefruit
  • juice of 3 lemons
  • 1/2 cup water
  • 1/3 cup light brown sugar or honey
  • 2 star anise
  • 1 cinnamon stick
  • 1 vanilla pod, halved lengthways
  • sliced fresh fruit, to garnish
  • 1 handful fresh mint, to garnish
  • 1 cup sweet dessert wine (or use lemonade)

What to do

1. Add all of the ingredients to a heavy-based pot and simmer gently until the sugar has dissolved, and the mixture has thickened to a syrupy consistency, about 30 minutes.

2. To serve, strain the grapefruit syrup, add the chopped fruit and fresh mint and dilute to taste with soda water, ginger ale, lemonade and sweet dessert wine if using.
