Zanzibari Iced Tea



Cooks in:        Serves:2-4

  • 4 cardamom pods, bruised until they crack open
  • 1 stick cinnamon, broken in half
  • 1 stick fresh lemongrass, bruised
  • Small handful fresh mint
  • ¼ cup honey
  • 2 cups just-boiled water in a small teapot
  • Fresh stone fruit, to serve

What to do

1. Add the herbs, spices honey and water to a teapot or small saucepan and allow to steep for 4-5 minutes.

2. Leave to cool and serve over ice with chopped fresh fruit.
