Zanzibari Iced Tea
Ingredients
Cooks in: Serves:2-4
- 4 cardamom pods, bruised until they crack open
- 1 stick cinnamon, broken in half
- 1 stick fresh lemongrass, bruised
- Small handful fresh mint
- ¼ cup honey
- 2 cups just-boiled water in a small teapot
- Fresh stone fruit, to serve
What to do
1. Add the herbs, spices honey and water to a teapot or small saucepan and allow to steep for 4-5 minutes. 2. Leave to cool and serve over ice with chopped fresh fruit. Photo from 'Sarah Graham's Food Safari' by Ricardo de Leça.
