Watermelon & Feta Salad

 

Summer on a plate. With a twist. And I know this might already have been twisted last summer by various foodies out there, but I wanted my turn too. I wanted to know exactly what it felt like to feel the punch of freshness from the watermelon interrupted by the smooth saltiness of the feta, with a kick of basil and mint bringing up the rear.  Well, pretty darn delicious I’d say. It’s different, with no room for stick-in-the-muds, no siree, but most certainly delicious.

 

Ingredients

Cooks in:        Serves:2

  • Half cup rocket, rinsed
  • 1 cup fresh watermelon, cubed and most prominent pips removed
  • Half cup feta, cubed
  • Quarter cup basil, roughly chopped
  • Quarter cup mint, roughly chopped
  • Pinch of salt and freshly ground black pepper
  • 1 tsp balsamic reduction or 2 tsp balsamic vinegar
  • 2 tsp lemon juice
  • *Optional: quarter of a red onion, finely chopped

What to do

1. Scatter the rocket leaves on a small salad platter, then add the watermelon, feta, basil and mint.

2. Drizzle over the balsamic reduction, lemon juice and sprinkle over the salt and pepper.

You are now good to go.
*I'm embarrassed to say I served this alongside very humble weekday ham and cheese lunch sandwiches, because I was dying to give it a go and couldn't wait until a more fitting partner presented itself, but if I had, I like to think that fitting partner would have been a roast fillet or salmon or trout dish.
