Cocktail Crafting with Catja Mavros

 

Hello Friends,

I’m so excited to continue our story with the my friends at Patrick Mavros. And in this case, it’s all about Golden Hour and Catja’s perfect cocktail. It all begins with a twist on a classic favourite in the form of a Clementine and Star Anise Gin and Tonic – my deliciously citrussy take on a perfect wintery cocktail. And like all great cocktails – it’s stirred, not shaken. At least, until they craft a cocktail shaker! Watch this space?

Here’s how to bring a little extra magic to your own kitchen…

Catja’s Gin Cocktail
With Clementine and Star Anise

WHAT YOU’LL NEED PER SERVING
50ml clementine and star anise syrup
50ml favourite Gin
75ml tonic
75ml soda water
Suitable glasses and garnish
Lots of ice
Swizzle stick

For the Clementine and Star Anise Syrup
¼ cup caster sugar
2 cups fresh clementine juice (or use fresh orange juice)
1 vanilla pod, halved lengthways
1 cinnamon stick, snapped in half
3 star anise (or use cardamom pods, gently crushed to release the seeds)

WHAT TO DO
1. Make your Clementine and Star Anise Syrup
Place the caster sugar, orange juice, and spices into a small saucepan and stir gently until the sugar dissolves, 2-3 minutes. Bring to a simmer and leave to cook gently until the liquid has reduced by about two thirds and is quite syrupy (this should take up to 30 minutes). Remove from the heat and set aside to cool. Store in the fridge until serving.

2. Mix up your cocktails according to the above rations, enjoy!
