Bambara Nut Hummus

 
 

Ingredients

Cooks in:        Serves:4-6

  • 1 cup ground bambara nuts, cooked
  • ½ cup extra virgin olive oil
  • 2-3 tbsp tahini
  • 1-2 tsp garlic, grated
  • 1 tsp Himalayan salt
  • ½ tsp white pepper
  • 1 lemons juice & zest
  • 2 tbsp water, extra
  • 1 tsp cumin seeds

What to do

1. In a blender add all the ingredients.

2. Blending until smooth. While removing the lid and scraping the sides of the blender to ensure the mixture blends equally. You may need to add additional ¼ water if the mixture is unable the fully blend.

3. Taste for additional seasoning (salt, pepper, or lemon juice & zest)

4. Serve with additional lemon zest, olive oil and cumin seeds.

Tip: To cook the bambara nuts, soak overnight covered in water. Drain and place in a saucepan with fresh water covering the nuts. Cook on low for 2 hours uncovered, adding water if the beans are uncovered in water. Cook until tender, the beans should feel tender when pinching between your fingers. Drain the liquid and set aside.
