Gluten-Free Choc Chip Pancakes

Ingredients

Cooks in:        Serves:2

  • 1 cup oat flour / 1 cup gluten-free flour
  • 1 tsp baking powder
  • 1 Tbsp caster sugar / honey / maple syrup
  • 1 cup plant based milk
  • 1 egg (or 1 Tbsp chia seeds soaked in 3 Tbsp water for a few minutes for a vegan egg replacement)
  • 1/3 cup dark Chocolate Chips
  • Favourite garnishes + maple syrup to serve

What to do

1. Add all of the ingredients to a mixing bowl and whisk together until well combined.

2. Cook the pancakes in a good quality non-stick pan over medium heat in batches of three (using approximately 1 Tbsp batter per pancake). I don’t usually add any butter but if you are struggling with the pancakes sticking to your pan you can add a little.

3. Pile the pancakes in a stack and serve with garnishes of your choice and a good drizzle of maple syrup.
