Roselle Ice Lollies
Ingredients

- ½ cup Local Village roselle flowers
- 500ml berry juice
- 1 lime, zested and juiced optional
- 125ml xylitol or sugar
- 125ml water
- 1 cup fresh berries (blueberries, raspberries, strawberries)
What to do
1. Place all the ingredients except for the berries in a saucepan, bring to a simmer. Stir to al-low the sugar to dissolve entirely. Allow to simmer for 3 minutes then switch off and re-move from heat. 2. Allow to sit for 30 min - 1 hour to completely cool down. Drain the roselle from the liquid, keeping the liquid and discarding the flowers. 3. Pour the liquid into glasses or lollypop containers. Divide the berries between the lollies. 4. Place in the freezer for 4-6 hours until completely frozen. If you are using glasses, insert sticks into the lollies after 2 hours of freezing. 5.
