Speedy Strawberry and Basil Sorbet

 

I love the happy-go-lucky pinkness of the blitzed strawberries flecked with the vibrant greenness of the basil. Berries also have fewer calories and fruit sugars than most other fruits, but this would work just as well with frozen mango or papaya and perhaps with mint instead of basil.

 

Ingredients

Cooks in:        Serves:2

  • About 400g fresh strawberries, stalks removed, rinsed and chopped
  • Zest and juice of 1 small lemon
  • 1-2 Tbsp honey, or more to taste
  • 1 Tbsp chopped fresh basil

What to do

1. Place the strawberries in the freezer until well frozen, minimum 3 hours. Alternatively buy a bag of frozen strawberries or mixed berries.

2. Remove the frozen berries, place in your smoothie maker along with the lemon juice, honey, basil and 1-2 Tbsp ice cold water. Blitz until you have smooth sorbet consistency, adjust to taste and then eat immediately or return the mixture to the freezer for 20 minutes or so to firm up a little more if you prefer.
