Spiced-Honey Figs With Orange Wafers

 

These will make your tongue dance. The chewy-crispy orange wafers are the very definition of more-ish, and the juicy figs with mascarpone and cinnamon-honey are, well, sublime. All together? It tastes like some kind of miracle.

 

Ingredients

Cooks in:        Serves:4 - 6

For the figs
  • 6 small fresh figs
  • 6 tsp mascarpone
  • 1 Tbsp honey
  • ½ cinnamon stick
For the orange wafers
  • 150g sugar
  • 125g syrup
  • 100g soft butter
  • Juice of 1 orange
  • 125g flour, sifted

What to do

1. Gently cut across the crown of each fig, cutting two-thirds of the way down. Gently squeeze the base and the top should open like a flower. Stuff with the mascarpone and refrigerate.

2. For the biscuits, pre-heat oven to 170C and lay a sheet of baking paper on a baking tray. In a small saucepan melt together the sugar, syrup, butter and orange juice. Remove from the heat and stir in the flour. Spoon the biscuit mixture onto the baking paper and spread it out evenly. Bake for about 10 minutes until golden. Remove, cool and cut or break into wafers.

3. Just before serving, pour the honey and cinnamon into a small microwave-proof jug and heat for about 25 seconds. Drizzle over the figs and serve with an orange wafer on the side.
