Chilled Pineapple and Watermelon Skewers with Mint Syrup

 
 

Ingredients

Cooks in:        Serves:4

For the Mint Syrup
  • 1-2 Tbsp honey

  • 
Juice of 1 lemon
  • 1 Tbsp chopped fresh mint
For the Skewers
  • 1 ripe pineapple, peeled and cut into 2cm cubes
  • 1/4 ripe watermelon, peeled and cut into 2cm cubes
  • 8-10 bamboo vegetable skewers, cut in half

What to do

1. Heat the syrup ingredients together in a small saucepan on the stovetop. As soon as the honey has dissolved into the lemon juice remove and set aside.

2. Skewer the fruit onto the bamboo sticks and lay on a suitable platter. Drizzle over the mint syrup just before serving.
