Apple Pie Bircher Muesli



Cooks in:        Serves:4

  • 1.5 cups whole rolled oats (certified gluten-free if necessary)
  • 2 apples (or pears), grated
  • ½ cup roughly chopped almonds or pecan nuts, toasted
  • 2 Tbsp toasted sesame seeds
  • 1 handful shredded coconut
  • ½ cup raisins
  • ¼ cup mixed seeds (e.g. sunflower, flax and pumpkin)
  • 1 cup milk of your choice (I like coconut or almond)
  • 1 cup water
  • 1 tsp vanilla extract
  • 1 level tsp ground cinnamon
To serve
  • Greek or coconut yoghurt
  • Extra chopped apple, or berries or stone fruit
  • Extra nuts and seeds
  • Honey or maple syrup

What to do

1. Mix everything together and store in an airtight container in the fridge overnight.

2. Divide into bowls or pretty glass jars the following morning, top with Greek yoghurt or coconut cream, a scattering of extra nuts or seeds if you have, berries, a drizzle of honey or maple syrup if you like, and enjoy.
