Pink Gin Fizz Popsicles!
Summer is HERE (in the Southern Hemisphere, that is). Our Joburg Jacarandas are in perfectly purple full bloom, thick thunderclouds gather almost every afternoon, weekend afternoons yield the wafting aromas of a dozen different braais and the sounds of poolside laughing and splashing, and it’s glorious. Also, there’s a gin thing going on here in South Africa at the moment, and I’ll be the last one to complain about that. A good G&T is hard to beat. And did you know that it’s just as delicious with rosemary and orange as it is with lemon or lime? Or try pomegranate and mint, OR, as I’ve done here, with a good dash of grapefruit juice. The combination of the gin with the tart zestiness of the grapefruit juice and the smoothness of the tonic makes for a party in your mouth. And then, think pretty pink Gin & Tonic, IN A LOLLY. And go!
Ingredients
Cooks in: Serves:Makes 2 lollies
- Lolly mould
- 1 tot good quality gin
- 100ml pink grapefruit juice
- 150ml tonic water
- Lots of ice
- Squeeze of lime
What to do
Mix everything together, divide between lolly moulds and freeze for at least 3 hours. Note
